This is a very easy recipe, my weeknight favorite. Seriously, it's so easy, even I, with my sometimes dubious cooking abilities, can't possibly mess it up. It's ideal for those crazy weeknights when you don't have time to cook for an hour or two but want something flavorful and delicious. And trust me, the aroma coming from the slow cooker all day long is simply irresistible – a wonderful aroma that reassures comfort and warmth, much like a warm hug from your kitchen.

I created this recipe as a solution to one of my friends, Maria, grumbling about the inclusion of weeknight meals. She had a busy schedule; her children were always running around, and she always felt like cooking was another task among many on her endless list of things to do. This recipe is my solution to her cry for ease. It produces a large quantity, ideal for leftovers. Maria explained to me how relieved she was; It made life easier for her family. I hope to do the same for you!

📖 Instructions

  1. First things first, grab your 6-quart slow cooker and give it a quick rinse. You know, just to make sure there are no lingering smells from that last time you experimented with 'interesting' flavor combinations. Don't judge, everyone's had those moments!
  2. Next, get your chicken breasts ready. If using frozen, give them some time to thaw—don't want to end up with a rocky-textured dish! Once they're thawed and ready to go, give 'em a quick rinse and pat them dry with paper towels. Think of it as a spa day for your chicken.
  3. Now, for the fun part! Chop up an onion into roughly 1/2-inch chunks. You could do smaller, but then you might end up with some onion-dust on your chicken. Nobody wants that. Not even your chicken.
  4. After that, grab your bell peppers and chop them up similarly to the onion. Again, don't go too small, unless you like a really intense pepper flavor. Remember, balance is key, my friends!
  5. In your trusty slow cooker, toss in the chicken, onion, bell peppers, garlic, cumin, chili powder, and your preferred amount of salsa. Remember to adjust the salsa to suit your taste. Too much heat? Less salsa. Not enough? Well, add some more!
  6. Stir everything gently until the chicken is mostly coated in the glorious salsa mixture. Try not to smash the chicken too much--we want it to stay relatively whole so it shreds nicely later.
  7. Now for the moment of truth—put the lid on your slow cooker and turn the setting to low. Let the magic happen for about 6-7 hours, or 3-4 hours on high. Remember, timing may vary depending on your slow cooker, so keep an eye on it!
  8. Once the chicken is cooked thoroughly (it should easily shred with a fork), take it out carefully. Let it cool down slightly, but not too long, you don't want a cold chicken fiesta!
  9. Once cool enough, shred your cooked chicken using two forks. This is so satisfying, I actually kind of look forward to it.
  10. Mix the shredded chicken back into the delicious salsa concoction in the slow cooker. Get it all good and saucy!
  11. And that's it! Your slow-cooked salsa chicken is ready to be devoured. Serve it with whatever your heart desires: tacos, quesadillas, rice, on its own... the possibilities are endless! Enjoy!
