Seriously, it's one of my favorite go to recipes when I'm not feelin' up to cookin' too hard. This dish is perfect for breakfast, lunch, or dinner, and it’s packed with protein and bold, savory flavors. I made this for a dinner party and everyone loved it!   1. First, we gotta press that tofu. Wrap the block of extra-firm tofu in several layers of paper towels. Then, place something heavy on top – like a stack of cookbooks or a cast iron skillet. Press for at least 30 minutes to remove excess water. This will help the tofu crumble nicely and absorb the gyro spices. I usually forget about it and leave it for an hour, lol
  2. While the tofu is pressing, let's get the gyro spice blend ready. In a small mixing bowl, whisk together the dried oregano, dried thyme, ground cumin, ground coriander, garlic powder, onion powder, smoked paprika, dried marjoram, salt, and black pepper. Make sure there are no lumps and everything is evenly distributed. I sometimes double the recipe and store the extra spice blend in an airtight container for future use. Just makes everything easier.
  3. Once the tofu is pressed, remove it from the paper towels and crumble it into a mixing bowl using your fingers. You want to get it into a nice crumble, not too big or small. It should resemble ground meat. This can be kinda messy. Just sayin'.
  4. Next, sprinkle the gyro spice blend over the crumbled tofu and toss to coat evenly. Make sure every piece of tofu is covered in those yummy spices! I usually just use my hands, but a spatula works too.
  5. Now, heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the gyro spiced tofu to the skillet and cook, stirring occasionally, until the tofu is heated through and slightly browned. This should take about 8-10 minutes. Keep an eye on it to prevent burning.
  6. If you're using nutritional yeast, sprinkle it over the tofu during the last minute of cooking. This will add a cheesy flavor and a little extra nutrition. I always love the taste. Adds a lil somethin somethin.
  7. Finally, taste the tofu scramble and adjust the seasoning as needed. You might want to add a pinch more salt or pepper, or even a dash of your favorite hot sauce for a kick. I am a lil bit of a hot sauce junkee tbh.
  8. Serve the gyro spiced tofu scramble immediately. It’s delicious on its own, in pita bread with tzatziki sauce, or alongside a Greek salad. Get creative and enjoy!
