My friend, Lars, just turned me onto Swedish köttbullar magic – those sweet little meatballs. But good guy Lars does.dumbs 'em out a bit. Flavor is my bag, and no one judges my well-publicized love for chipotle peppers (that spice rack is its own little its own world, friends). So I took Lars' basic recipe and added some fire.

  1. First, let's tackle the chipotle mayo. In a small bowl, whisk together 1/2 cup of mayonnaise (I like Duke's, but use your fave!), 1 tablespoon of chipotle powder (adjust to taste!), 1 teaspoon of lime juice, and a pinch of salt. Taste and adjust seasoning as needed. Set aside.
  2. Next, prepare the köttbullar. In a medium bowl, gently combine 1 lb ground beef (80/20 is ideal), 1/2 cup breadcrumbs, 1/4 cup finely chopped onion, 1 egg, 1 tablespoon of all-purpose flour (or gluten-free alternative!), 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Don't overmix; just get the ingredients blended.
  3. Using your hands or a meat grinder (pre-ground beef works just fine!), carefully form the mixture into 1-inch meatballs. Make sure you use a light touch; you dont want to overwork the meat or you'll end up with tough meatballs. Oh, and make sure to wash your hands!
  4. Heat about 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, carefully add the meatballs to the skillet. Don't overcrowd the pan; work in batches if you need to. We want a nice sear on them, alright?
  5. Cook the meatballs, turning occasionally, until they're browned on all sides and cooked through (about 8-10 minutes). Use a meat thermometer to check if the internal temperature is 160°F (71°C). If they're cooking too fast, lower the heat. No one likes burnt köttbullar!
  6. While the meatballs cook, prepare your mashed potatoes. Boil 2 lbs of potatoes until tender. Drain and mash with a potato masher or fork. Stir in 2 tablespoons of butter, 1/4 cup of milk (or cream, for extra richness!), and salt and pepper to taste. Yum!
  7. Once the meatballs are cooked, serve them immediately with the chipotle mayo, mashed potatoes, and lingonberry jam. If you wanna get fancy you can sprinkle some fresh parsley on top. You know, for aesthetics.
