1. Preheat your oven to 500°F (260°C). If using a pizza stone, place it in the oven while it preheats. This is crucial for a super crispy crust!
2. In a large mixing bowl, prepare your pizza dough (or use store-bought). I usually make my own using a simple recipe I found online--its amazing! Whatever you use, make sure your dough is nice and pliable.
3. Lightly flour a clean surface. Gently roll out your pizza dough to your desired thickness and shape. Aim for about 1/8-inch thickness for a really crispy crust.
4. Carefully transfer the dough to your pizza stone or baking sheet. Don't worry too much about it being perfect, it's all about the flavors.
5. Spread a thin, even layer of pesto over the dough, leaving a small border for the crust.
6. Sprinkle a generous amount of mozzarella evenly over the pesto. This forms the base for your delightful cheese explosion!
7. Next, layer your cheddar and provolone cheeses. Slightly overlap them to create a nice texture.
8. Finally, sprinkle the parmesan cheese over the top. Don't go too crazy; a little goes a long way with parmesan. Its strong!
9. Evenly sprinkle curry powder over the top. I like about 1 teaspoon--its perfect but adjust to your taste. (Don't forget, its easy to add more, but its impossible to remove!).
10. Bake for 8-12 minutes, or until the crust is golden brown and the cheese is melted and bubbly. Keep a close eye on it; ovens vary!
11. Once baked, carefully remove the pizza from the oven. Let it cool slightly before slicing and serving. And finally... enjoy!
