A taste explosion that will leave you craving more. I was introduced to this incredible blend for the first time at a birthday party held at my friend's house, and I've been hooked ever since. It's the best blend of Mexican and Spanish flavor, a gastronomic experience not to be missed!

  2. Next, get your skillet nice and hot. Add about a tablespoon or two of olive oil – enough to coat the bottom. We want those potatoes to get golden brown and crispy, not soggy!
  3. Once the oil is shimmering, carefully add the potato slices to the skillet in a single layer. Don’t overcrowd the pan; you might need to do this in batches. Cook for about 5-7 minutes per side, or until they’re golden and slightly crispy. Season lightly with salt and pepper throughout the cooking process.
  4. While your potatoes are getting their crispy tan, don’t forget the eggs! In a large bowl, whisk together 6 large eggs with a generous pinch of salt and pepper. Seriously, don’t be shy with the pepper; it adds a wonderful bite!
  5. Once all your potatoes are cooked, gently remove them from the skillet and set aside. Wipe the skillet clean and set it back on the stove over medium heat. Add another tablespoon or two of olive oil.
  6. Now comes the fun part! Add the cooked potatoes to the skillet, then pour the egg mixture over them, spreading it evenly to coat everything. Lower the heat to medium-low to prevent burning.
  7. Cover the skillet and let the eggs cook until they are just set but still a little wet on the top (think of it as a really thick and beautiful omelette!), about 5-7 minutes. You don't want dry, rubbery eggs.
  8. Once the eggs are set, use your spatula to loosen the tortilla from the edges. Carefully slide it onto a plate or cutting board. Let it cool slightly so it is firm enough to cut, then cut into wedges.
  9. To assemble the tacos, warm up the taco shells or tortillas—I love corn tortillas for this. Fill each shell or tortilla with a wedge of tortilla Española. Add your favorite toppings, such as salsa, avocado, sour cream, or hot sauce.
