It’s the kind of dish that will transport you to a tropical paradise—even if it’s just your own kitchen. I first had a version of this dish during a trip to Thailand. It was amazing and this recipe is my attempt to recreate that wonderful memory. This recipe is pretty darn easy to make – which is good, because my time is always super precious. But the result? Oh my gosh, the result is seriously impressive!

  1. First, let's tackle the plantains! Peel the plantains and slice them into 1/4-inch thick rounds. Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the plantain slices, making sure not to overcrowd the pan. Fry them until golden brown and crispy, about 2-3 minutes per side. Remove them from the pan and place them on a paper towel-lined plate to drain excess oil. Season immediately with a pinch of sea salt. Let them cool slightly.
  2. Now, for the peanut sauce! In a small saucepan, combine peanut butter (creamy or crunchy, your choice!), soy sauce, rice vinegar, honey, lime juice, and a generous pinch of red pepper flakes (if you like a little kick!). Whisk everything together until smooth. If it's too thick, add a tablespoon of warm water at a time until you get the desired consistency. Taste it, and adjust the seasonings to your liking. Maybe you'll need a little extra honey, or some more lime juice – it's all about that personalized flavor.
  3. Let's assemble those spring rolls! Fill a shallow dish with warm (not hot!) water. Gently dip each rice paper wrapper into the water for about 15-20 seconds, or until softened. Lay the wrapper flat on a clean work surface. Place a few fried plantain slices in the center of the wrapper, along with the vermicelli noodles and some fresh lettuce leaves. (if you've added other veggies, now is the time to place them too).
  4. To roll: Fold in the sides of the wrapper, then tightly roll it up from the bottom, like you're making a burrito. Gently set aside and repeat with the remaining wrappers. Make sure to place them on a parchment lined baking sheet as they are delicate, if you don’t want to serve them immediately.
  5. Finally, serve! Arrange the finished spring rolls on a platter. Serve them immediately with a generous drizzle of the peanut sauce on the side for dipping. Garnish with extra chopped peanuts, fresh cilantro, or a squeeze of extra lime juice – if you're feeling fancy.
  6. Important Note: The rice paper wrappers can be a bit tricky. If they tear, don't worry! Just keep rolling. These are meant to be fun, not perfect! Also, don't overfill them – a little goes a long way. And if your peanut sauce gets too thick, just add a little water to thin it out. Simple!

📝 Notes

  • For extra crunch, you can sprinkle the fried plantains with a little sesame seeds or chopped peanuts before rolling them into the spring rolls. You can also add other veggies like shredded carrots or bell peppers.
  • Make sure your peanut sauce isn’t too thick; If it is, just add a little warm water to thin it out.
  • Feel free to adjust the amount of red pepper flakes to your preference. If you don’t like spicy, skip it entirely!
