Remember that awkward first date? Mine involved a slightly burnt pizza and a whole lot of nervous laughter. But amidst the chaos, there was a genuine connection. Now, years later, anniversaries are a big deal. Not just dinner reservations and fancy gifts, but something made with love. That's where this Chocolate Covered Raspberry Anniversary Fondue comes in. It's sweet, it's a little messy, and it's perfect for sharing – just like a good marriage, right?

This isn't your regular chocolate-covered anything. We're elevating the experience with a simple yet decadent fondue. Imagine plump, juicy raspberries, each one a tiny burst of summer, getting a luxurious bath in silky smooth chocolate. The contrast of tart and sweet is just chef's kiss. Plus, it’s surprisingly easy to make, even if your kitchen skills are, shall we say, 'enthusiastic' rather than 'expert'. I've definitely been there! My first attempt at this… well, let’s just say the smoke alarm got a good workout.

📖 Instructions

  1. Gently wash the raspberries under cool water and pat them completely dry with paper towels. Moisture is the enemy of chocolate adhesion!
  2. Prepare your double boiler: Fill a saucepan with about an inch of water and bring to a simmer. Place a heatproof bowl on top, ensuring the bottom of the bowl doesn't touch the water. If you dont have one, simply use a heatproof bowl over a small pot.
  3. Add chocolate and melt: Break the chocolate into small pieces and place them in the bowl. Stir constantly until the chocolate is completely melted and smooth. If needed, add a tablespoon of vegetable shortening or coconut oil to help thin the chocolate and create a smoother consistency.
  4. In a separate small saucepan, warm the heavy cream over low heat. Do not boil!
  5. Pour the warm heavy cream into the melted chocolate and whisk until well combined and the mixture is smooth and glossy.
  6. Remove the chocolate mixture from the heat and let it cool slightly. This will help the chocolate adhere better to the raspberries.
  7. Line a baking sheet with parchment paper.
  8. Holding a raspberry by its stem (or using a toothpick/skewer), dip it into the melted chocolate, ensuring it's fully coated. Gently tap off any excess chocolate.
  9. Place the dipped raspberry on the prepared baking sheet.
  10. Repeat the dipping process with the remaining raspberries.
  11. Once all the raspberries are dipped, place the baking sheet in the refrigerator for about 15-20 minutes to allow the chocolate to set.
  12. If desired, melt white chocolate and drizzle it over the chocolate-covered raspberries for an elegant touch. Or, sprinkle with chopped nuts or sprinkles before the chocolate sets.
  13. Store the chocolate-covered raspberries in an airtight container in the refrigerator until ready to serve. They are best enjoyed within 24 hours.
