1. Finely chop the white chocolate. The finer the chop, the smoother the fondue will be. Trust me on this one, I learned the hard way!
2. If using a double boiler, fill the bottom saucepan with a few inches of water and bring it to a simmer over medium-low heat. If using a microwave-safe bowl, set it aside for now.
3. Place the chopped white chocolate in the top part of the double boiler or microwave-safe bowl. Make sure you have a good thick layer of white chocolate, you dont want to run out midway!
4. Gradually whisk in the heavy cream, a little at a time, ensuring the chocolate melts completely and smoothly. Avoid using high heat; low and slow is the key to a perfect fondue. You don't want it to seize up. You should be able to stir continuously.
5. Once the chocolate is completely melted and smooth, stir in the vanilla extract (if using). A little vanilla extract goes a long way, so start with less than you think you need and add more if necessary, taste testing as you go
6. Keep the fondue warm over very low heat, stirring occasionally, until ready to serve. If using a microwave, stir every 30 seconds to prevent burning and ensure even melting.
7. Arrange your favorite dippers around the fondue pot and enjoy! I like to use a mix of fresh fruit, cookies, and even some pretzels.
8. To keep the fondue warm while you're serving, you can place the fondue pot on a small candle warmer or use a chafing dish. Just ensure it is set at a low temperature so the chocolate doesnt burn
