🍽 Ingredients

📖 Instructions

  1. First, you'll need to preheat your oven to 375°F (190°C). This ensures the mac & cheese bakes evenly and the cheese gets nice and bubbly.
  2. While the oven is warming up, cook the pasta according to the package directions. Make sure to salt the boiling water; this helps season the pasta from the inside out. Nobody likes bland noodles, yuck!
  3. Drain the pasta in a colander and set it aside. Dont rinse it! The starch on the pasta helps the cheese sauce cling to it.
  4. Now, let's get started on the cheesy sauce. In a large pot, melt the butter over medium heat. Stir in the flour and whisk continuously for about 1-2 minutes to create a roux. This will thicken the sauce.
  5. Slowly pour in the milk, whisking constantly to prevent lumps from forming. Continue whisking until the sauce is smooth and begins to thicken. This usually takes about 5-7 minutes.
  6. Reduce the heat to low and stir in the salt, pepper, garlic powder, and smoked paprika. These spices add depth of flavor to the cheese sauce. Feel free to adjust the seasonings to your liking; I always add a pinch of cayenne pepper for a lil kick!
  7. Remove the pot from the heat and stir in the grated cheddar cheese, Gruyère cheese, and Parmesan cheese. Mix until the cheese is completely melted and the sauce is smooth and creamy. If the sauce is too thick, add a splash of milk to thin it out. Oh man, this smells so good already!
  8. Add the cooked pasta and the mixed vegetables to the cheese sauce. Stir gently to combine, making sure the pasta and vegetables are evenly coated in the sauce. Make sure that its all mixed well, but don't mash the veggies!
  9. Pour the mac & cheese mixture into a greased 9x13 inch baking dish. Spread it out evenly.
  10. In a small bowl, melt the remaining butter. Mix in the breadcrumbs and sprinkle the mixture evenly over the top of the mac & cheese. This will create a golden brown and crispy crust.
  11. Bake in the preheated oven for 20-25 minutes, or until the mac & cheese is bubbly and the breadcrumb topping is golden brown. Keep an eye on it to prevent the topping from burning.
  12. Remove the baking dish from the oven and let it cool for a few minutes before serving. This allows the mac & cheese to set slightly. Enjoy your delicious rainbow veggie mac & cheese! Dont burn you tongue!

📝 Notes

  • For a richer flavor, use whole milk or half-and-half.
  • Add a pinch of cayenne pepper for a little kick.
  • Feel free to use other types of cheese, such as Monterey Jack or Fontina.
