  1. First things first, preheat your oven to 375°F (190°C). This is important because we want our cheese sauce to be perfectly melty and bubbly by the time we're done.
  2. Next, cook the pasta. Bring a large pot of salted water to a boil. Add your pasta and cook according to package directions until al dente, which is usually about 8-10 minutes. Don't overcook it, or it will turn into mush in the cheese sauce! Drain it well using a colander when it's done. Then, set aside.
  3. Now for the chorizo! Remove the chorizo from its casing, then crumble it into a pan over medium heat. Cook it until browned and crispy, about 5-7 minutes, stirring occasionally. Remove the chorizo from the pan and set aside. Leave the rendered chorizo fat in the pan, we will be using this later.
  4. Make the cheese sauce! In the same pan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute, stirring constantly, to create a roux. This is the base of our luscious cheese sauce, so don't rush this part.
  5. Gradually whisk in the milk, a little at a time, making sure each addition is fully incorporated before adding more. Stir constantly until the sauce thickens and becomes smooth. It should coat the back of a spoon nicely. Keep whisking to prevent lumps. this step is kind of crucial you know.
  6. Remove the pan from the heat. Stir in the shredded cheddar cheese, Monterey Jack cheese, and a pinch of salt and pepper until the cheese is completely melted and the sauce is creamy and smooth. If it seems too thick, add a little more milk. Now would be a good time to taste and adjust the seasoning. You can add more salt and pepper to your liking.
  7. Finally, combine everything! Add the cooked pasta, cooked chorizo, and the creamy cheese sauce to a large bowl. Stir gently but thoroughly to coat the pasta evenly. We want each strand of pasta lovingly coated in cheesy goodness!
  8. Pour the mixture into the prepared baking dish and bake for 20-25 minutes, or until golden brown and bubbly. Keep an eye on it to make sure it doesn't burn. If the top is getting too brown, you can cover it loosely with foil.
  9. Let it cool slightly before serving. Enjoy your amazing Mac and Cheese with Chorizo!
