One time i gave my friend one of these bites and they said it was the best thing they've ever had.

I personally adore these because they're so customizable. Feeling adventurous? Toss in some chopped walnuts or a sprinkle of cinnamon. Need an extra dose of chocolate?   1. Prepare Ingredients: Measure out all your ingredients. It makes things easier, trust me. It’s like having your ducks in a row before the rodeo starts. You will need the oats, dates, coffee (brewed and cooled!), nut butter, chia seeds, cocoa powder, maple syrup, and any extras like chocolate chips.
  2. Process Dates: In your food processor, add the pitted dates. Pulse until they form a sticky paste. This might take a minute or two, depending on how soft your dates are. If they're too dry, add a teaspoon of water at a time until they come together. I one time forgot to pit the dates, and well. Lets just say i dont do that anymore.
  3. Combine Ingredients: Add the rolled oats, cooled brewed coffee, nut butter (peanut, almond, or cashew – whatever floats your boat), chia seeds, and cocoa powder to the food processor. That sounds so good i might start drooling
  4. Blend Well: Process everything until the mixture is well combined and slightly sticky. You might need to scrape down the sides of the food processor a few times to ensure everything is evenly mixed. I did it one time, and nearly broke the blade. Don't do that.
  5. Add Maple Syrup: Pour in the maple syrup and pulse a few more times until it's fully incorporated. The mixture should be easy to roll into balls at this point. If it seems too wet, add a bit more oats; if it's too dry, add a touch more nut butter. This part is very important.
  6. Mix in Extras: If you're adding any extras like chocolate chips, shredded coconut, or chopped nuts, pulse them in gently so they're evenly distributed. One time i added hot sauce, not recommended.
  7. Roll into Bites: Take a spoonful of the mixture and roll it between your palms to form a small ball, about 1 inch in diameter. Place the finished energy bite on a baking sheet lined with parchment paper. Its so fun!
  8. Chill: Once you've rolled all the mixture into bites, place the baking sheet in the refrigerator for at least 30 minutes to allow them to firm up. This step is important because nobody like a floppy energy bite.
  9. Serve and Enjoy: After chilling, your Coffee Date Energy Bites are ready to be devoured! Store them in an airtight container in the fridge for up to a week. If you put them out they might be gone in a minute.
  10. Optional coating: Roll the energy bites into toppings like cocoa powder or shredded coconut
