  2. Next, prepare the cauliflower. Remove the outer leaves and trim the stem, leaving the core intact. This will help hold the "steaks" together. Cut two 1-inch thick steaks from the center of the cauliflower head. Don't worry if they aren't perfect; the slightly uneven edges will get wonderfully crispy.
  3. Now, let's make the miso glaze. In a small bowl, whisk together 3 tablespoons of white miso paste, 2 tablespoons of mirin (sweet rice wine), 1 tablespoon of soy sauce, 1 tablespoon of maple syrup (or honey for non-vegan), and 1 teaspoon of sesame oil. If you like a little heat, add a pinch of red pepper flakes.
  4. Brush the miso glaze generously over both sides of the cauliflower steaks. Make sure every nook and cranny is coated for maximum flavor! Save any leftover glaze for basting during cooking.
