1. First, let's make the strawberry puree. Wash and hull about 1 cup of fresh strawberries. Roughly chop them into smaller pieces.
2. Next, add the chopped strawberries to a blender. Add 1 tablespoon of lemon juice and a splash of simple syrup (about 1 tablespoon, but adjust to your desired sweetness).
3. Blend until completely smooth, scraping down the sides as needed. Once it's a smooth puree, pour the mixture into a fine-mesh sieve set over a bowl to remove any seeds or pulp.
4. Now, let's assemble the cocktail. In a cocktail shaker, combine 2 ounces of your favorite vodka (I love using Grey Goose, but any good quality vodka will do!), 1 ounce of fresh lemon juice, and 3/4 ounces of simple syrup.
5. Add about 2 ounces of the strained strawberry puree to the shaker. Give it a good shake to mix the flavors. Add ice cubes to the shaker and shake it vigorously for about 15-20 seconds to really chill the drink.
6. Strain the mixture into a chilled champagne flute. I think it gives the drink a really special touch.
7. Top the drink off with about 4 ounces of high-quality chilled champagne. Do this gently, so as not to loose the beautiful pink colour and delicate bubbles.
8. Last step is to add a garnish! A single, fresh strawberry sliced in half, or a tiny sprig of mint works beautifully. If you're feeling fancy, try a sugared rim on your glass.
