  2. Next, scoop out the avocado flesh with a spoon and place it on a cutting board. Dice the avocado into half-inch cubes. Be careful not to over-ripened avacodos, they might get mushy!.
  3. In a mixing bowl, combine the diced avocado with the sunflower seeds, dried cranberries, and any other optional ingredients you're using, like a pinch of salt or pepper. Make sure the bowl is big enough to allow easy mixing!
  4. Gently toss the ingredients together, being careful not to mash the avocado. A little bit of breaking up is alright, but try to keep most of the cubes intact.
  5. In a separate small bowl, whisk together the olive oil and lemon juice. If you're using it, add a tiny pinch of your favorite sweetener like stevia or monk fruit sweetener.
  6. Pour the dressing over the avocado mixture and toss gently to coat. Taste and adjust seasonings as needed. Some people like a bit more lemon juice, while others prefer a touch more salt.
