  2. Prepare the lentils: Rinse 1 cup of green or brown lentils under cold water, picking out any debris or stones. Set aside, this ensures we are working with clean lentils.
  3. Sauté the aromatics: In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add 1 chopped yellow onion, 2 minced cloves of garlic, and 1 diced carrot. Sauté for about 5-7 minutes, until the vegetables are softened and fragrant. Don't rush this step; letting the aromatics develop will add depth to the soup.
  4. Add the apricots and rosemary: Stir in 1/2 cup of chopped dried apricots and 2 teaspoons of fresh rosemary (or 1 teaspoon dried). Cook for another 2 minutes, allowing the apricots to plump up slightly and the rosemary to release its aroma. It smells divine, doesn't it?.
